Quick Pal Khoa (Pal Kova) - Indian Sweet in 5 Minutes - Microwave method

I used to love Pal Khoa as a kid and still do. Traditionally, Pal Khoa is prepared by boiling milk and simmering it for about 2 hours with sugar until it becomes thick and concentrated. Here's a quick method using Condensed milk and some plain yoghurt.

5 Minute Pal Kova - Microwave method

What You Need -

  • Sweetened Condensed milk (Milkmaid) - 1 tin (Low-fat works well too)
  • Plain Yoghurt / Curd - 3 tbsp
  • Milk - 2 tsp (optional)

A big, wide microwaveable bowl
Stainless steel spoon to stir

How To -

Empty the tin of condensed milk (no need to add sugar since its sweetened) into a big microwave-safe bowl (preferably glass).

Microwave for a minute.

Add a tablespoon of yoghurt to it, mix well and microwave for another minute. You can see the coagulation that occurs.

Let stand for a minute, then repeat the same step for upto 3 tbsp of yoghurt, in 1-minute intervals.

You can see the contents of the bowl raising as it is being heated. The texture becomes thicker and closer to that of Khoa after about 5 minutes.

Add a tsp of milk if required.

Stop microwaving once the consistency is that of Pal Khoa. This will take a maximum of 10 minutes, including waiting time.

Garnish with shredded almonds and enjoy :)

This can be prepared quickly when there are unexpected guests or when you do not feel like slogging in the kitchen :)

Pal Khoa is often used interchangeably with "Theratti pal" which is the next stage of thickening of milk, I guess. Let me confirm with amma and update this.
